egg sandwich and lots of flavor!!!
I usually take a packed lunch to work and as much as I try my best keeping it healthy and full of nutritiousness bits and bobs every now and then I just wish I could wipe up a simple sarnie and pop it in my lunch box (so to speak as I actually bring my lunch to work i my handbag). Thinking of it AND the fact that I am a sucker for hard boiled eggs I decided to put a twist on the good old egg mayonnaise sandwich.
1 hardboiled egg (I only cook mine for about 8 minutes as I like it slightly runny)
2 tsp creme fraiche
1 spring onion finely chopped
1/2 tsp Dijon mustard
1 slice of ham cut into small bits (for a vegetarian option you can use pointy peppers as they are nice and sweet)
a hand full of chopped watercress
2 slices of toasted brown bread (I really like the nibble bread from hovis, it's little and with a really nice nutty flavor)
pass the egg trough the egg slicer and mash it up with a fork, in a bowl mix in the mustard, creme fraiche, spring onion and watercress. Crack some black pepper into it and a pinch of salt if you use it (I don't). spread the mix into a slice of cooled toasted brown bread and enjoy it!!!
very very simple but incredibly creamy and (if like my you enjoy your egg) really yummy!!!
simple, easy and if using the Hovis' nibbles it won't even have 250calories!!!
